Andy loves the bug. Broth full of flavour but doesn't love the torched oiled wombok
But good elements on the dish

Delicious but needs salt!
7 people told him to put salt on and he didn't listen

Crostoli with lemon custard and berries
Jock has eaten heaps of crostoli Hopes this one is good
Jock says everything he wanted it to be

He is concerned that the balance will be wrong for the judges pallet is different they might think it is too sour

All the delicious packed into the bowl. Depth of flavour is something else. It Screams berries!


Melissa says the heart of the dish is fish done great but hero is the berries. Knocked out of the park
Andy asked if wasn't a berry challenge would he have used all the berries .
Admits no and he says well keep putting them in anyway

An epic tasting 2 dishes exceptional.

Khanh and Amina
Khanh the broth deep rich and refined

Amina the quail was cooked perfectly and and the berry glaze finger licking good.
the round about berries and khanhs celebrated that the most so Khanh wins

Laura, Amina, Poh, Harry, Hayden and Sarah will cook in tomorrows pressure test
Andy talking about how special the dishes are. complex and intricate..... cloche gets lifted and you go wow
Tomorrow there is no guest chef

No wow dish because
Each of them has to bring their own WOW dish

Harry is tired, stayed up late doing his recipe

Amina has a nostalgic dish.....and it is woooow 🤣🤣
Judges want the same wow as traditional pressure test
Judges will leave 30mins before end of cook
So the first time they see the dish they get that wow

Other than the fact that Poh does stupid dishes that need to be pulled out in the last minute so that it isn't fair to others, I would love if they had to swap the recipe folders with each other.
Looks like 3 went to the pantry first and 3 to equipment
Stout braised beef pie for Poh
But she has never done it in 2hrs usually at least 4hrs

Sarah says the meaning of wow for her means taking something familiar into something unexpected
No fancy tricks for her...she goes for texture and flavour
She is making Pork chou by looks of it
A take on sweet and sour pork
Andy and Jock dont look impressed
Saying it will come to her flavours of the pork
She is now thinking it is too simple.... oh dear..

Amina is doing an ice cream..middle easter style

Laura doing ravioli roo tail so I will not blog her
Least amount of wow will go home

Hayden is doing a Violet Crumble
He is risking it on a dessert, wants to prove himself
Hayden telling Melissa he wants to impress himself as well as the judges and Melissa loves that
Parfait, honeycomb, chocolate....yum bee pollen really going for it.. then onto the honeycomb

Harry doing seafood, no surprise

Reynald would have loved to do this sort of pressure test...but he is nutso

Po still not happy with the meat...... but cant wait any longer before the meat goes into the pressure cooke

Amina descibes some sort of turkish dish... icecream.. doesnt want rustic wants more fine dining


Sarah trying to make an 80's style red sauce.
Sarah wants to make her sweet and sour pork amazing simple maybe but elegant damn it I adore sweet and sour
Apparently the talent in the room is MASSIVE!
Sarah worries who she’s up against...all stars. this dish must be done perfectly

Poh ramped up her cooking to get it done
Poh's decided to make up time by making up the decorative items now. good idea while the meat cooks.. she makes pastry with blue cheese. she is happy with texture.. needs to keep the pace up

Hayden doing his honeycomb He wants it nice and thin....mmmm I am hungry good colour good consistency
I love hearing their childhood stories
Everyone is confused about why his is compressing the honeycomb
Defeats purpose of honeycomb, Pushing all the air out of it 🤔

Does anyone actually have a backup plan if something goes wrong?

Pie needs 40mins in the oven but the meat is still cooking
Think Poh is regretting her pie now

Delicious things occurring on Sarah's bench. Bringing the flavour

Amina doing ?chewy? Ice cream
Melissa loves Amina is going out of her comfort zone

Poh Meat is just on the edge, not as fall apart as she wants but close enough
Meat into the pie crust but have to put the top on
Putting all her decorations on
Usually 45mins at 170-180c but put on at 190c as 30mims left
judges worried it wont be cooked

Sounds like he has heaps to do still
Melissa loves a good food story but will it translate to a wow.in flavour?
She sounds like she has already written him off. I cant wait to see it and would love to try it

is it honeycomb if there is no air in it? guess you would have to eat it to know

I do love that he is pushing himself though

Careful careful with the pasta
Sarah is amazed by the pasta - Wants to watch her make them but no time..really needs to concentrate on her own

Harry is happy with his elements and needs to plate now
Wants to add more though Back to pantry.... calamari pippis and so on freaking out the gantry... yes amazing but will it take away from the lobster?

Sarah's could be too simple but she is happy with her pork Chris approves he wants to try it
Harry's too complicated.
Poh too much in too little time.

Going to be interesting how they judge this

Poh still watching the oven.... oh dear....... something about leaving it in there till the last 10 secs. Poh really doesn't use time wisely at all.

Amina plating - She is trying to make it beautiful not rustic


Harry taking great care with plating His dish requires theatrics too He is happy with his dish...smells like the sea someone says,, he thinks the flavours are there

hell I thought it was a salad.. then i look steam from the underplate....

But a lot going on on the plate
Melissa says her initial concern about the visual being the biggest impact happened
Not a cohesive singular wow dish to eat
Andy liked it.. but too many flavours dominating the lobster

They said they wanted Wow when the cloche opened. Isn't the visual a big part of that? If they weren't there for the first part of the cook they wouldn't have known that the lobster was originally the hero and they would have taken it as it was, a mixed platter of seafood.
\So much going on with so many dominant flavours which over power the hero lobster

Amina not impressed myself It does look very pretty
But not a wow with visual. She is safe though.
Jock says that is something else
Main part of icecream was a bit bland but then a bit of flavour
Andy loves it. All her guts and earth that doesn't look like Amina
Melissa says still Amina but not as they have seen her before

Sarah
Jock says its a good looker
Melissa says it smells so good
Andy is disappointed...that it is his last mouthful
Jock says truely stunning. Pork jowl cooked perfectly
Melissa says this dish is wow
I want to eat it

I just loved the look of it
Melissa says noone would have thought Hayden would have brought that to the table
Ice cream needed a bit of balancing with salt.
Jock found the honeycomb sticky and sticky
melissa pitting him up for elim...

Well it looks impressive but is the pastry cooked?

Jock says he has eaten a lot of pies but what makes this wow is she used chuck which overcooks easily
Andy says pastry is flakey and buttery
Melissa says smart pairings
So poh is safe


Amina, we expected flavour but none of us expected it to look like that
Laura, pasta we know your good at it but that was wham bam thankyou wow
And Sarah, Jock wanted to climb on the table. Dish of the day!

Leaves Hayden and Harry

Harry the cloche went up maximum wow but too many flavours fighting
Hayden we werent expecting that. Who doesn't love nostalgia
And Hayden your flavours worked together
Which is why Harry has to say goodbye
Pretty obvious really.
He is glad he came back
