grilled marron essentially smoked brown butter cauli and apile of other stuff including sherry mushroom broths... about 90 steps.. bloody hell
10 sub recipes..... yanno just give me some nice fresh seafood cooked well

chef tells sashi he has made another misktake his broth is caramelised.. it will spoil the mushrooms.... he cant do it again... Sashi says I cant make my marination marinade..Ben warns him something is on fire

Chloe starts of the marron one was a tartare and the other was grilled

she plunges it in ice water.. Ben checks she got all the poop out
Sashi happy with the consomme and strains it.. he will have to do it again as s ome raft got in, chef agrees that the colour is good....
Sashi asks Jess if he can r ead page 5 of the recipe she agrees and t hen asks why... they both laug wehn he shows her the burnt paper

Jess starts cutting up the marron Ben keeps questioneing her to s ee if she is on track.. she is...

Chloe says she is feeling the pressure . the dish is very intricate.. she starts adding stuff.. hoping she has got it all right

Jess is happy with consomme and tastes it yep under control

/chloes dish looks great alal when they eat it gutzy says there are obvious probs here tartare is mushy the yuku is not right chef said it is lacking balance but t he consomme is perfect cravat said it doesnt eat like yours

Jess.. gary loves the tartare.. broth is complex has a great fungussy flavour chef is very pleased with it all. Cravat says it just eats well

Sashi a much larger size gary calls it the main course version .. it still looks very pretty. Gutzy says it is very impressive chef loves the mushrooms and broth tatare is a bit rough,, Gary says it is not as refined as some

well am I right are they culling the white girl?

ben crab bisque squid and pasta... looks like papardelle... vegies are s auteeing. blah blah

now Summer sashi pan seared barra.. cherry tomatoes some sort of broth

khanh..... absinthe and cucumber granita oh and a pile of disgusting sago and stuff. I would not eat this at all

I will never get this squid ink thing. leave it out Ben

I think they are wary of Khanh could go either way.
cravat hovers over jess. she is behind..and raspberries are not a winter fruit... she is gonna change it..raspberry jelly...

others seem to be okay but cravat tries to upset Ben about using the crab shells.. retro?

jess her jelly is more puree what to do... she chatters away in panic.. I have no idea what she is gonna do now...she seems to though

ben doing a really quick burn on the scallops 10-20secs a side.. perfect

mmm smels wonderful cooked beautifully they say.. they love the taste, fish perfectly cooked great broth ..

Jess had to explain pbj to Gary not a very good winter dish... to me... a nice sticky date pud would have been better.. Gary s aid it is pretty clean but not tasting the pb..... cravat says nice, but no finessed

Ben...not really seeing winter either.. but they love it all...so how does it eat? well Gary said it is one of your best dishes. Gutzy said we are so proud, our job is done. Cravat it is a perfect dish

so Sashi or Ben I would say

Winter is Ben

okay we are at t he Ice Bergs today this is the restaurant where those loonies dive into the water in th emiddle of winter.. glorious view.. havent been there for years... always worth a visit

be inspired by a modern take on Italian pasta fish meat or dessert 30 diners Sashi sinks
Ben has an advantage.. he gets to choose what he wants and he takes fish

staggered start sashi ben jess and khanh in 30 min increments

og look at it now when we used to go it was a falling down club.... now it is this fancy spot..wow..... it was the palce you would go t o after a swim

the chef tries to talk Sasi through it..... I think he has it now/ he is rosting pumpkins now... he is cutting a lot.. the chef says.. do the pasta... sasi wants to do pumpkin.. chef seems to think it is a mistake.... gutzy agrees it takes time to do pasta

now he talks to the chef... fish zuchini puree.... chef nods in approval.... he fries anchovies in a bit of oil.. man oh man yummo... he makes a romasco sauce... he is a ware he has to fillet a lot of fish

now bck to sashi who cant find pans.... hilarious as he cant find a thing.. not even the gas lighter.. aha.... there it is and now it isnt working...
of course it is a disaster
