Anushka dessert with a "forrest floor" dessert
Green team
Scallops for entree by Christina artichokes saltbush why on earth would uyou use jerusalem artichokes with scallops.. vile and such a waste of time
Simon doing lamb for main as well
Larissa doing dessert wattle seed cookie smoked choc ice cream
Tessa also using chestnuts, bush tomato salt, scallops all local
Tessa is going for earth flavours and local scallops
Green team is using artichokes and beans which are local
Very similar dishes for both sides
Has Tim got too much going on?Tim doesnt want to drop any of the beautiful ingredients
Very similar dishes makes it more intense for Christina and she is feeling the pressure...cos the dishes are similar judging will be harsher..

Gary saying roasting them with the skin on will make a lovely texture and flavour
She is so happy about saved time
George is concerned about the cooking of scallops for functions he said it is anightmare.. panseared she says it is a risk he said and the over chef said dont overcrowd the pan
he says the same thing to Christina.... she freaks out whereas Tessa was much calmer..
Tim is happy with how his lamb is prepped and his pumpkin is roasting
Now he is doing his reduction sauce

Christina is happy with the artichokes They are being pureed now..the skins add flavour
George likes the flavour
Larissa feels like she is behind on her dessert
Her smoking has done next to nothing...waste of time she said
No more time to smoke it either as it needs to go in the churner
Larissa is using a different smoke now and said she will use her pin if she fails
Yellow team being strategic

Focusing on getting other elements ready for dishes

judges disappointed that t here are only 2 scallops on yellow but love the dish the oil was a smart move... adds freshness.....

gutzes get there. a lot going on.... well it does look good though.. they eat it... lamb great but no harmny on the plate.. could create three dishes.. the plums too sweet for this dish......
greens main gary likes the lamb.... beautifully cooked black barley is amazing..... but they keep finding something missing
desserts. Lari ont the greens... gary approaches... there are 12 customers who have missed out on mains... where are those dishes.. they find the plates.... but is there food...??? diners seem to be going hungry....... Poor Simon is blaming himself... Gutzy said create a dish you cant leave people hungry... so they try

out it goes... Judges are impressed..... they eat it and like it.. not too sweet... choc is wonderful crispy and crunchy captures the forest....
green dessert...... in the meantime Lari goes out to apologise to her hungry green diners....... they get t he food and enjoy it... Lri back to the dessert. oh crap she has overfilled the churners...... they taste it an love it so they scoop bits out and whack it into the blast chillers

She plans to keep a clear head

so naturally Larissa is using the pin. Gary said she would be a fool if she didnt
So Simon or Christina will go home
Santi Fernandes sets the dish which tests technique precission and endurance about a nine out of ten n difficulty lovely dish quail scallops and shitake and a few other things..... now you have to do 2 of his dishes at t he same time... here it is... choc banana brown butter sweet ice cream thingy
Christina hasnt been in a pressure test before
3.5hrs to do both
Gutzy said be super dilligent and caring
Simon is nervous as there are tehniques he has never done
Christina is confident with the dessert
Simon thinks he has just as much chance
Quail jus first up
And deboning quail
Need to keep skin intact
Looking good for christina so far rolling it well... gantry approve
Simon wants to stay calm but is having trouble deboning the quial. Nushie offers help finally he works it out as Guty hovers.. use your instinct
He has second guessed himself and wasted so much time He is moving fast now he has worked it out
Christina is worried she took too much meat off the leg

With a recipe to follow he is more confident with the dessert
His mousse is in th moulds wih 1hr down then smashes bananas in blender adds choc to melt,,,, /gary reminds Simon texture what did it look like? Simon makes sure his choc melts for a smooth consistency

looks like chris mixture has come together after fridge.. good she is feeling the pressure... onto the ice cream.... soft and creamy and banana taste.

both are doiing okay and are having small hiccups Simon had to remake th twill.... gutzy said crunch time what do you leave on what do you take off

she eventually gets it out with a spoon and serves the dish..the rest looks lovely but the texture of the spuma is a bit off... so sad really as it is a majot recipe problem
