cravat warns sandeep to have a backup plan if he is unsure about marron..he does some spiced meat

blake very confident with marron he is going to do a ravioli..it looks wonderful... gaz and guts advise on sealing the ravioli

Tessa first the marron bisque looks lovely to me. Cravat says marron is a gift done properly your dish is my new fave dish says Gaz

Derek.... the creme brule is cracked they note but it tastes great

Blake marron ravioli... mmm look at that... it is a real hit

Anushka.. texture is wonderful
we go through nondescrpt dishes... most taste good

Dee next with the panfried steak eggplant puree and fried eggplant and blackberry culi..... they hate the palting and they do not like the diah

Steph marron garlic pasta.. they dont like the plating
Yosras steak and blackberry does not work at all
someones dish is way too s weet gutsy says he has a headache
Gary realised he doesnt like steak and blackberry steak was overcooked

Tonights pressure test is the Bombe Alaska with Dee, Yoshra and Nicole.

Darren Purchess arrives with a big grin chocolate salted craramel w ith flecks of chock in a mandarin sorbet and then Italian meringue... Yoshra has a bit without alcohol... they tuck in Darren says timing is important.... icecream has to set.... browning mustn't be soggy

Nicole is the most confident and seems to know what she is doing.... meringe stuff into blast chiller

yoshra is a pharmacist and is good at recipes getting temp right and so on she feels this is helpful she seems to be working steadily

Tim tells Dee to move a lil faster... the ice cream must go in...but the misture looks terrible.. thick and lumpy... perhaps weighed incorrectly.. you cant use it.. make it again.. bloody hell Gaz tactless much

Yosra and Nicole are motoring along..Darren watches Nicole and seems happy

Yosra wonders is it necessary to temper the choc.. she decides to chop up the choc.

Nicoe has trouble getting the temp down.... she wants it at 30.... it is 34... down to 31 she puts it on t he slab... still too hot.. wont fit in fridge... what to do

yoshr is doing something and it is upside down she fixes it

time to start meringue apparently Nicoles has a problem.... Darren said keep going... but if you do it now it will collapse

Yoshra up next it also looks good gary says meringue is a bit uneven rest looks great Darren said meringe is well made .. it is a good dessert others could have been layered better.... but it tastes great

now Dee it looks good and she is pleased... so they cut into it looks nice

but when they eat it.. not so good
