thats the sort of dish everyone would love one of the best dishes she has cooked so far according to george.
Rick saying he has seen some things he would definately copy, and give credits for of course

In immunity this week will be Tati, Abbey and Steph

In tomorrows elimination will be Derek, Leah and Jess

Clare Smyth ran Ramsays flagship restaurant for ten years 3 Michelin stars has set the test...this is a tough dish she says dexterity and technique omg pear and lemon verbena jelly creme diplomat.. and more.. good lord

they eat it so many flavours.... silky smooth crunchy
4 hrs to make it 10 mins to plate recipe is huge - 67 steps...... Derek draws a picture of it. Jess feels at a big disadvantage as derek and Leah like doing desserts Jess reads the whole recipe before starting and Leah does the first 5 steps...

starting on the meringue first Have to get the exact amount of meringue by weight in the molds. They take 3hrs in the oven
Derek is being so careful

Derek has his domes and discs in the oven
So does leah
Jess is behind. Only just putting her meringues in the molds
She is really feeling the pressure

And Clare isnt helping with that pressure, you're still on the meringue stage. You need to get those in the oven in the next 2 minutes
Jess is concerned her domes are too thin. She has them in the oven and is working on the discs

Derek is onto the jelly
Clare looks so severe
Leah is onto the sorbet but isnt sure about one of the ingredients
Clare says staying calm is really good,,,means you are in control

Leah has her sorbet in the churner
2.5hrs to go

Jess is catching up slowly She has her sorbet in the churner now too
They are all doing their pear pearls...what a time waster y ou have to scoop bits out of the pear

Everyones jelly looks to be set

Derek is falling behind and his jelly has frozen.. left it in t he blast chiller for
too long....whisking is only making it worse.. can it melt and reset? seems to have worked but it has put him behind

Leah seems reasonably calm and capable

creme diplomat is a lighter version of creme pat apparently.... Jess has good flavour not not texture

Leah has hers done the way she likes

so pears are being sliced in the mandolin
leahs are too thick and redone and now are too thin... oh dear.. she will double them up

now it is time to take the meringues out careful they dont crack Gary keeps saying read the last page

Derek gets is meringue out perfectly
Leah is almost there

Jess alas is not so lucky everyone tries to be supportive two cracked three crack 4 crack.. poor Jess

now they have to plate it in front of judges
he gets it right and they all discuss just how right it is..it works so well and tastes beautiful

Leah gets it done and they enjoy it.... it is not as good as Dereks... some too thick and some too thin but a good dessert

Jess omg.. it collapses into a disgusting mess in front of them.............. how so very sad Gary likes the sorbet... the meringue is too thin and the cream is too loose and that is why she is going home

Matt Sinclair ex contestent Sunshine Beach is the mentor

so w hat is he challenge

round one .. use the appliances under the clothes
nothing electrical
microwave sandwich press kettle um are all electrical
a delicious savoury dish in 45 mins

oh bacon a nd egg sandwich what a mess I used to make in the old days
larissa thinks popcorn grits when she thinks microwave and is using calamari

Tati vietnamese pancake dipping sauce using spatchcock on the sandwich press...
Abbey is making snapper fillet with cauliflower puree
and Steph is making an eggplant c urry.. yuck

oh dear larry has burned the popcorn

the judges stick their noses in to see what they are doing
they all seem pretty happy with the contestents and the contestents seem happy too

seriously grits... what possesses these people

tati has to start again as the first one didnt work

this time it works and for the first time ever on MC we see alfalfa
Larissa worries if she has done too much
Abbey;s fish is superb
and not sure about eggplant curry.. blah
Time is up
Larissa up first Every element jams flavour into it they Love each element but too many elements on the plate

Steph next with her curry Judges say it looks interesting very delicious and they all love it

Abeey up next with her fish.. it looks superb and it tastes fantastic..

Tati next they ike the look of it and they really seem to b e enjying eating it Gutzy says she has entered the competition

they are torn between Tati and Abbeys dish..... they drag poor Matt into break t he tie... he picks Tati to go for the pin

so tati has to face some chef called Donovon Cooke...he has lost the immunity challenge in the past...

tati picks an ingredient from the garden Matt warns her choose wisely think of his strengths so she chooses some super hot sort of chilli Thai green or something for her thai green spatchcock

she has 15 mins more than he does but doesnt think it will b e enough

He comes out and is surprised at t he chilli he decides pan fried whiting with mussels and chilli.. he is aiming for a more subtle dish

he preps his fish first and concentrates... he doesnt want to run out of time again

he smells her chilli paste cooking and says it smells delicious

he finds he has too much chilli in it... it spoils his vision.. how to fix it..more tomatoes and stock

he wanders over to her kitchen to s ee what she is doing.. she is pureeing the pumpkin...he praises her

he goes back to cook his fish
tati is struggling to plate Matt wants to help but cant
Donovan has his fish done now and is plating with 60 secs to go and he gets it right this time

I really dislike challenges like this one. They have to cook something so complicated, with so many processes, and don’t even have time to read the method in full before they start. Many hands work in a professional kitchen, I'm sure it’s not down to one cook to make the whole thing with such time constraints.
