looks like the board ate another post.. and I am sorry I just dont have time.. so it will have to be the fb copy

A 4 course italian menu 2 teams 2 Nonnas
Service challenge serving 4 courses of italian food for 80 guests
Most diners will be italian
Red team - Anushka, Abbey (captain), Sandeep, Derek, Tim, Nicole, Tati, Tessa
Green team - Steph, Christina (captain), Joe, Ben, Walleed, Larissa, Kyle, Simon
Starter, Entry of pasta, main and dessert
3hrs and starter must leave the kitchen
Green team
Starter calamari
Entre pumpkin agnalotti…
Main Osso bucco
Dessert vanilla panna cotta

Red team
Starter Ricotta stuffed zucchini flowers
Entree spaghetti angale
Main beef cheeks (against nonnas advice)
Dessert panna cotta

Green teams pasta is very crumbly and dry
1hr down and neither teams has their mains on
Beefs cheeks are finally on for the red team

Nonna is happy with joes dough
Steph and simon working on the osso bucco
Green team doesn't have enough filling for their pasta
Rush to get more of the filling made
Larissa is working on the panna cotta
Anushka is working on the red teams panna cotta
Anushka has gotten confused on how much is in the pot

Larissa is happy with her panna cotta and is pouring it in the moulds to get it in the fridge
1hr until starters must leave the pass
Red teams entree and starter are on track
30mins until service starts
Steph is making a basil oil for the mayo
Diners are arriving
15mins until service
Greens pasta is almost prepped

Calamari is almost ready
Something is wrong with the mayo - It is runny
5 mins until service
And service starts now

Both teams plating.
Greens calamari up first
Batter is very light.

Idea is good but cooking of the calamari needed more care
It is a bit floury
Mayonnaise is a bit oily too

red teams zucchini flowers now
Its delicious
Great produce cooked simply and well
Judges love this dish
Entree to the red team
Pasta starters next
Red team releasing the pressure cookers
Beef cheeks are falling apart
But the tuscan cabbage hasnt been done and Nonna is cross
Derek forgot to cut it up

Red teams pasta first spaghetti all vongole
Judges are happy with the red team
Pasta is perfect
Seafood is cooked properly too
Very happy judges

Their sauce isnt ready
Burnt butter just tastes like butter

Christina wont let it out until the sauce is better
Now she is happier with sauce they are plating
Pumpkin agnolotti
Delicious
We have never seen filled pasta in a service challenge
Pillows of happiness
Osso bucco is falling off the bone

Red has mains going out..their beef cheeks. The polenta looks soft and creamy and tastes just as good as it looks and the vbeef cheek is so tender...beef falls apart when barely touched. It is a beaut plate of food tasty heartening wonderful gravy, this dish is a winner

Dessert time
Both teams have to get the pannacottas out

Green teams first go up first
Vanilla panna cotta, honeycomb and grilled figs
Gary says he is only going to taste a little bit and then he tastes it and that promise goes out the window. ha ha they love it


Red teams panna cotta came out
Limoncello panna cotta
No problems with the gelatin..everyone is smiling

Greens Nonna says she is coming back tomorrow 😆
Greens dessert was the dish of the day

But the starter didnt come together

And that is why they are in elimination

Blind taste test tonight
Green team is up for elimination
Christina, Simon, Ben, Joe, Larissa, Walled, Steph and Kyle
4 will go into round 2

food is placed in front of them and they taste it and write it down
1st item is almond
Everyone is correct
2nd item looks like pesto
Everyone is correct with pesto
Up 3rd is dates
Simon thought mushrooms but it feels and smells wrong
Most put dates but joe put prune
Joe is first to round 2

4th is a dish not an ingredient
Steph has no idea about the smell
She thinks cabbage but its a dish so is confused
She has no idea
Pad thai by evveryone except steph

Steph put fried rice and joins joe in round 2

Up next is a maccaroon but they want flavour too
Black sesame macaroon

Simon and kyle and ben were wrong
because of that 5 people in round 2 instead of 4

Cook whatever you want...sweet or savoury garden and pantry are in play
As it is a blind taste for the judges Poh will run the floor
Poh says it may be simple advice but do what you know today...dont try and impress

Joe is out of the pantry with only milk?
He is making fresh ricotta and pine nut raviolli wih tomato sauce and parmesan crisps

Steph is maiking a salted caramel and walnut tart with star anise ice cream...she is careful not to put in too much star anise

Kyle is making tamarind apple and miso braised pork with corn emulsion and mushroons and pumpkin...not sure if that is enough time for the pork.. even in the pressure cooker

45 mins to go

Ben is doing prawn dish a pawn sambal and crispy prawn heads
Smon is making eye fillet of lamb. A classic dish says Poh

Joe is using a different pasta recipe to what he used yesterday
30mins down!

Steph tastes the ice cream adds more star anise
25mins to go and her ice cream still isnt churning. It wont churn in time at this rate
Everyone saying get it in the machine. She adds more salt and is finally happy to get it churning

Sandeep is concerned she used far too much

Joe has his sauce cooking and just put the nuts in the oven

Checking his riccotta Nice and smooth
Mixing his toasted nuts to the riccotta
Simons smoked tahini yoghurt, lamb fillet, a fresh marmalade and a sauce
Simon is smoking the kitchen as well as his yoghurt!!!!

She is happy with the caramel and walnut mix
Joe is making his ravioli now with 20mins to go
His dough isnt going through the machine
He is in trouble He is panicing
Maybe he should have used his normal recipe
