What is under the sheet today
Talking about how everyone is feeling
poh feels zen and is in battle mode.. that is her strategy stay focussed
Must recreate a dish without a recipe
Todays guest judge is benjamin cooper
He specialises in thai food and describes this dish as
Spicy and a bit feral

you have to perfectly recreate it without a recipe.... oh lord poor Sarah is not happy

Lots of chillis
Between 30 and 40 chillis
In that dish alone
One of his hottest curries

Apparently it is sweet
No coconut in it
Stock based curry
Broth like consistency
Fat is their friend apparently

Brendan is sweating from it
Everything under the cloth has to be used

That is a huge bench
And lots of ingredients
I imagine a lot goes in the stock

Brendan is sweating from it

Ben says when he looked at the table it took him a moment to work out where to start
If they dont use something on the table it means it is missing from their version of the is so glad I dont have to eat it
They can keep tasting through the cook

Time starts now

Everyone takes their dish to their bench
I guess grab everything at the start?
Only 90mins to do the dish
Huge fish
Brendan using chicken for the stock
Sarah loves the dish but so little time.makes getting the flavour difficult
Sarah using chicken, onions, leak and garlic for her stock

oh yes Poh is confused

Workijg on her rotti now
Ben seems happy with wjat is in her stock
tasting some.ingredients
Poh feels.in a good headspace 2 secs ago she was confused
just a basic chicken stock for her
Just chicken, salt and water
Ben says stock should be chicken
Roti needs to rest or will be dry

I hope Sarah comes throigh....
ha ha sarah is saying it is about balance
Ben asking poh what is in her stock
Asking anything else in the stock? She realises now probably should be more in it

Poh working on curry paste
Too many ingredients to list a few chillis galangal lemon grass
Lots of tasting going on
30mins down 60 to go
Ben giving advice, what you smell.is what you end up tasting
Brendan smelling the dish
Brendan setting his mouth on fire
e put 8 chillis in his paste
Ben says it is 30 to 40 chillis in the one serve
Brendan has good logic behind his choices
Sarah working on her paste, as is Reece
Reece trying to work out what the judges meant by layering flavour
Reece is worried about the orhers doing great with pumping out flavours
He is relying on his taste to.identify flavours

Sarah is excited by the flavours and style.of.food

She isnt sure what to do with the fat
Jock tellimg her to taste the dish again
Talking about her curries being full of layers
She is going to cook the paste in the pork fat
She overcooked the paste...starts again she is really mad and frustrated
40mins to go.now
Sarah mad and frustrated with herself
She had some left over she can use but will it be enough?
Yeah Mel simple...lets see yoy do it

Reece is stressing
At this stage, I would say Reece is the one ... but I hope not
He hasnt started his curry whilst everyome else is balancing theirs

Ben says im the restaurant this 10mins is when they start cooking the curry
Now it has reversed, maybe Reece isnt in trouble 🤣

Sarah knows she has made a mistake they dont fry off the curry paste completely add the broth regularly but has no time to start again
Reece does a quick fry off of the paste then adds the stock
Followed by fish
Poh says she knew it was too long cooking her curry but couldn't resist doing it
She says it tastes very different..like a Malaysian curry.... not like bens
has to do the roti and tries to rescue the broth
5mins left now

She found it challenging. Being her type of food but create a specific dish was difficult
She.is hoping she has scraped through
She looks so deflated.
Ben says polar opposite of.pohs.... this is too thin
Flavour hits then gone
Hits certain notes but not altogether
Doesnt have that feralness of Bens
Andy thinks the burning of the paste impacted the dish

Nicky Whelan Jock was sure sje would nail the dish
Between Poh and Sarah....but think Sarah is gone

Jock says 1 dish mailed the brief, as close to bens as they could.hope for. Force to be reckoned with and that is Reece
He cant believe it
He is in shock.
Brendan also safe, a bloody good curry

Poh your dish was too thick but dish was balanced and punchy
Sarah your dish was too thin and didnt hold the flavours
Poh is safe as a result
Sarah is going home

Emelia not used to smoking.. is overcomplicating it must do what she does best.. smoke and choc work so smoked choc mousse.. needs something fresh black currents as a sorbet judges hover..... just two elements.... you do know this is for immunity.. you need more... now she is panicked
